Pork, Mushroom, and Arugula Salad

    •   2-3 ounces leftover Roast Pork Loin
    •   1/4 cup leftover Sauteed Mushrooms
    •   3-4 cups arugula
    •   1 tablespoon pumpkin seeds (pepitas)
    •   2 tablespoons Whole Grain Mustard Dressing

Method: Toss pork, mushrooms, and arugula with mustard dressing; top with pepitas.
