    Easy Glazed Honey Balsamic Chicken is the 4 ingredient answer to busy weeknights. Tender, juicy chicken coated with a simple and delicious honey balsamic glaze that is ready to go in just about 20 minutes. It just doesn’t get any better or easier than this.

    Prep Time

    Ingredients

        •    1/3 cup honey
        •   
    1 tbsp balsamic vinegar
        •   
    2 tsp dried thyme
        •    salt and pepper to taste
        •   
    3 lbs chicken , thighs and drumsticks preferred

    Method

    1. Preheat oven to 475F.
    2. Line a large, rimmed baking sheet with foil or parchment paper. Set aside.
    3. Place chicken pieces on the baking sheet and season with salt and pepper. Give it a good rub to really work those seasonings into the chicken.
    4. In a small bowl or measuring cup, whisk together honey, balsamic vinegar, and thyme.
    5. Drizzle a small amount of glaze onto each piece of chicken and using a brush to coat the chicken.
    6. Roast for 20 to 25 minutes, or until chicken is cooked through, brushing the glaze on two more times during roasting. Serve immediately.

    Air Fryer Whole Chicken

    A quick, keto-friendly, Whole30, and paleo recipe for whole chicken that was prepared in an hour using an air fryer.

    Prep Time

        •    Cook time: 1 hour
        •    Yield: Serves 6

    Ingredients

        •   4 lb whole chicken thawed
        •  
    1 tbsp sea salt
        •  
    1/2 tbsp smoked paprika
        •  
    1/2 tbsp onion powder
        •   1/2 tbsp garlic powder
        •  
    1 tsp Herbes de Provence or Italian Seasoning

    Method

    1. Mix all of the seasonings in a small bowl.
    2. Rub the seasonings on the outside and inside of the meat. Allow the meat to become infused with flavor by marinating it overnight.
    3. Take the chicken out of the refrigerator ~20 minutes before you want to cook it. Meat tends to cook more evenly when it's not straight from the refrigerator.
    4. Add parchment paper or foil to the air fryer pan.
    5. Cook the meat on 400 degrees (or the chicken setting on your air fryer) for 30 minutes.
    6. Flip the chicken and cook it for an additional 25-30 minutes. I prefer my chicken skin to be dark and crispy so I tend to leave mine in for 30 minutes.
    7. Allow the chicken to rest (I pull the cooking pan out of the air fryer and sit it on a trivet on the counter or on top of the stove) for ~10 minutes before cutting into it.

    Prep Time

        •    Cook time: 1 hour & 15 minutes
        •    Yield: Serves 4

    Ingredients

        •   1 4-5 pound 2-3 kg whole chicken, at room temperature giblets and neck removed from cavity
        •  
    1/4 cup unsalted butter, melted
        •  
    3 tbsps olive oil
        •  
    1/4 cup white wine, (OPTIONAL) -- use a dry wine like a Sauv blanc or Chardonnay
        •  
    1 lemon, halved
        •  
    Salt and freshly ground pepper, to taste
        •  
    2 tbsps fresh chopped parsley
        •  
    4 garlic cloves, minced
        •  
    1 head of garlic roughly peeled and cut in half horizontally through the middle crosswise
        •  
    3 fresh whole rosemary sprigs

    Method

    1. Preheat oven to 430°F | 220°C (400°F or 200°C fan forced). Line a baking tray with foil, or lightly grease a roasting pan.
    2. Discard neck from inside the cavity and remove any excess fat and leftover feathers. Rinse chicken (including cavity) under cold running water. Pat dry with paper towels.
    3. Pour the olive oil, melted butter, wine (if using) and the juice of half a lemon over the chicken, under the skin and inside the cavity. Season chicken liberally on the outside and inside the cavity with salt and pepper. Sprinkle over the parsley.
    4. Rub the minced garlic over the chicken, mixing all ingredients together over the chicken and under the skin.
    5. Stuff the garlic head into the chicken cavity along with the rosemary sprigs and the squeezed lemon halve. Tie legs together with kitchen string.
    6. Place breast-side up into baking tray or roasting pan. Roast for 1 hour and 15-20 minutes, basting half way through cooking time, until juices run clear when chicken thigh is pierced with a skewer.
    7. Baste again, then broil for a further 2-3 minutes, until golden.
    8. Remove from the oven, cover with foil and allow to stand for 10 minutes before serving. Serve, drizzled with pan juices and remaining lemon half cut into wedges or slices.
