    Recipes — pork mince

    Pork Sliders with Smashed Avocado

    Prep Time

        •    Prep and cook time: 10 minutes
        •    Yield: Serves 4

    Ingredients

        •    cooking spray
        •    3/4 tsp kosher salt
        •    1/2 tsp garlic powder
        •    2 tsps fresh lemon juice
        •    1/2 ripe peeled avocado
        •    8 small Bibb lettuce leaves
        •    2 small ripe tomatoes, sliced
        •    12 ounces tbsps chopped fresh flat-leaf parsley
        •    8 (1 ounce) whole-wheat slider buns, halved crosswise
        •    2 ounces Monterey Jack cheese, shredded (about 1/2 cup)

    Method

    1. Heat a grill pan over medium-high heat. Lightly coat cut sides of buns with cooking spray. Place buns, cut sides down, in pan; cook 1 minute or until lightly toasted.
    2. Combine pork, parsley, salt, and garlic powder in a medium bowl, gently mixing with hands. Divide mixture into 8 equal portions, shaping each into a 1/4-inch-thick patty. Lightly coat both sides of patties with cooking spray. Arrange patties in pan coated with cooking spray; cook 2 minutes. Turn patties over; top patties evenly with cheese. Cook 2 to 3 minutes or until cheese melts.
    3. Combine lemon juice and avocado in a bowl; mash avocado with a fork, and stir to combine. Spread avocado mixture evenly over bottom halves of buns. Place 1 patty on each bottom bun. Top each with 1 tomato slice and 1 lettuce leaf. Top with top halves of buns. Serve immediately.

    Smoky Pork & Black Bean Tacos

    Mexican pork chilli with a smoky barbecued flavour, served in crispy tortilla shells with ripe avocado.

    Prep Time

        •    Prep time: 10 minutes
        •    Cook time: 15 minutes
        •    Yield: Serves 2

    Ingredients

        •    8 taco shells
        •    300ml passata
        •    2 tsps vegetable oil
        •    1/2 red onion, chopped
        •    5 tbsps barbecue sauce
        •    500g pack lean pork mince
        •    400g can black bean, drained
        •    small bunch coriander, chopped
        •    soured cream, to serve (Optional)
        •    1 ripe avocado, peeled and sliced
        •    1/2 iceberg lettuce, finely shredded
        •    2 tsps each smoked paprika and ground cumin

    Method

    1. Heat the oil in a large frying pan, add the onion and cook for 5 mins until softened. Sprinkle over the spices and cook for 1 min more. Add the mince, breaking it up with the back of a wooden spoon, and stir until cooked through.
    2. Stir the passata and barbecue sauce into the pan along with 4 tbsp water. Increase the heat and allow the sauce to bubble and reduce until it clings to the meat. Add the beans, season and cook for a further 2 mins, then stir in the coriander. Heat the tacos following pack instructions.
    3. Use the pork and bean mix to fill the tacos, top with slices of avocado, shredded iceberg lettuce and a dollop of soured cream, if you like.

    Pork and Apple Sausage Rolls

    Prep Time

        •    Prep and cook time: 30 minutes
        •    Yield: Serves 6

    Ingredients

        •    1 leek
        •    500g puff pastry
        •    1 royal gala apple
        •    500g minced pork
        •    1 large free-range egg
        •    1/2 tsp mustard seeds
        •    4 sprigs of fresh thyme

    Method

    1. Preheat the oven to 200°C/400°F/gas 6.

    2. Wash, trim and dice the leek, core and dice the apple, then pick the thyme leaves.

    3. Combine the pork, leek, apple, thyme leaves and mustard seeds in a bowl. Season and set aside.

    4. Roll out the pastry to 1cm thick and 34cm x 30cm. Halve lengthways and place a strip of mince down the centre of each.

    5. Brush the edges with beaten egg, roll up and seal. Brush with more egg, then cut each strip into 3 rolls.

    6. Score the tops and bake for 20 minutes, or until golden and cooked through.

    Pork & Pepper Meatballs on Parsnip Mash

    The ultimate comfort food: sweet red pepper mixed into these meatballs add depth of flavour and parsnip mash is a great twist on your usual spuds

    Prep Time

        •    Cook time: 30 minutes
        •    Yield: Serves 2

    Ingredients

        •    1 tsp olive oil
        •    140g passata
        •    1 egg, beaten
        •    1 tsp oregano
        •    ¼ tsp cinnamon
        •    250g lean pork mince
        •    1 tsp smoked paprika
        •    1 red pepper, chopped
        •    2 garlic cloves, crushed
        •    3 parsnips, peeled and chopped
        •    1 tbsp flat-leaf parsley, chopped
        •    1 wholemeal pitta bread, torn into pieces

    Method

    1. Heat oven to 190C/170C fan/gas 5. In the small bowl of a food processor, put the cinnamon, half the paprika, the pepper, 1 garlic clove, the oregano and torn pitta. Blitz until very finely chopped, then tip into a large bowl and add the mince and the egg, and season well. Rub 1 tsp of the oil over a large baking sheet. Squish the pork and pepper mixture together with your hands, shape into 8 meatballs and place evenly spaced on the prepared baking sheet.

    2. Bake the meatballs for 20 mins or until cooked through and lightly golden. Meanwhile, cook the parsnips in a pan of boiling water over a high heat for 15 mins, then drain and mash with some seasoning, keeping warm until needed.

    3. For a quick tomato sauce, put the remaining crushed garlic and paprika in a small saucepan with the passata and cook over a medium heat for 5 mins, until thickened a little. To serve, divide the parsnip mash between the plates, tip the meatballs into the pan with the sauce and stir to coat them, then pile everything on top of the mash. Scatter over the parsley and drizzle with the remaining olive oil. Serve immediately.

    Hoisin Pork Sausage Rolls

    Just six ingredients is all you need for this speedy, budget - friendly sausage roll dinner!

    Prep Time:

        •    Cook time: 25 minutes
        •    Yield: Serves 4

    Ingredients

        •    2 eggs
        •    2 tsps vegetable oil
        •    1/4 cup hoisin sauce
        •    600g pork and veal mince
        •    1/2 cup fresh breadcrumbs
        •    400g frozen garlic and ginger stir-fry vegetables
        •    2 sheets frozen ready-rolled puff pastry, partially thawed

    Method

    1. Preheat oven to 220ºC/200ºC fan-forced. Line a large baking tray with baking paper.

    2. Combine mince, hoisin sauce, breadcrumbs and 1 egg in a bowl. Season with salt and pepper.

    3. Lightly beat remaining egg. Cut 1 pastry sheet in half crossways. Shape one-quarter mince mixture into a 24cm-long sausage. Place along edge of 1 pastry sheet half. Brush opposite edge with egg. Roll up pastry to enclose filling. Cut in half. Place, seam-side down, on prepared tray. Repeat with remaining pastry, mince mixture and egg.

    4. Brush tops with egg. Bake for 20 to 25 minutes or until golden and puffed.

    5. Heat a wok over high heat. Add oil. Swirl to coat. Stir-fry vegetables for 2 minutes or until starting to soften. Add flavour sachet. Stir-fry for 2 minutes or until tender. Serve sausage rolls with vegetables.
