    Recipes — Pork collar butt

    Roast Pork with Macadamia and Sage Stuffing with Roasted Pears

    As you all know I love love love roast pork! This recipe is a little different, firstly it uses pork loin and secondly it’s stuffed and rolled. The pork loin is stuffed with an entirely gluten-free/paleo stuffing as I’ve replaced breadcrumbs with almond meal/flour. The stuffing is bang full of flavour from the garlic, onions and sage and the macadamias and toasted pine nuts give the stuffing awesome texture.

    A classic addition to any roast pork is applesauce but instead I’ve roasted pears with the pork. This would work well with roasting whole apples as well. The apple/pears will add a lovely sweetness to the pork and whilst not necessary I think it would be a shame not to have them. I also made a quick jus from the pan juices by adding some white wine to deglaze the roasting pan (once again this is not essential).

        •    2 tablespoons olive oil
        •    1 brown onion, finely chopped
        •    4 slices Primo Gourmet Selection Pancetta, finely chopped
        •    2 garlic cloves, crushed
        •    1/2 cup (80g) macadamias, coarsely chopped
        •    1/4 cup (45g) toasted pine nuts
        •    1 cup (70g) dried breadcrumbs
        •    2 tablespoons finely shredded sage
        •    1 egg, lightly whisked
        •    1 (about 1.5kg) boned rolled pork loin or leg pork
        •    1 teaspoon fennel seeds
        •    1 teaspoon sea salt flakes
        •    4 Williams pears, halved lengthways
        •    2 tablespoons maple syrup
        •    Steamed asparagus, to serve
        •    Baby rocket leaves, to serve


    1. Preheat oven to 230°C. Heat half the oil in a large frying pan over medium heat. Add the onion, pancetta and garlic and cook, stirring, for 5 minutes or until onion softens. Add macadamias and cook, stirring, for 3-4 minutes or until nuts are lightly golden. Remove from heat and set aside to cool slightly.
    2. Transfer to a medium bowl. Add the pine nuts, breadcrumbs, sage and egg and stir to combine. Season with salt and pepper.
    3. Place the pork loin, rind-side up, on a clean surface. Pat dry with paper towel. Turn pork over and use a small, sharp knife to make a 5cm-deep cut under the eye of the meat to make a cavity for the stuffing. Place the stuffing across the centre of the pork. Roll pork to enclose the filling. Secure with kitchen string, tying at 2cm intervals. Place in a roasting pan. Drizzle with remaining oil and sprinkle with fennel seeds and salt. Use your hands to rub into the rind. Place the pears around the pork and drizzle with maple syrup. Roast in oven for 30 minutes. Reduce heat to 180°C and roast for a further 45 minutes or until pork is tender and pears caramelise. Remove from heat and cover with foil. Set aside for 15 minutes to rest.
    4. Cut pork into slices. Place on serving plates with roasted pears and drizzle over pan juices. Serve with steamed asparagus and baby rocket leaves.

    Root Beer Pulled Pork with Peach Slaw

    Root Beer Pulled Pork with Peach Slaw made in the slow cooker just in time for game day! This recipe has a simple ingredient list and that Homemade BBQ Sauce and those peaches in that Peach Slaw, you can’t miss out on that sweetness. YUM!

        •    Yield: Serves 8-10


        •    or Root Beer Pulled Pork
        •    1 boneless pork loin roast (2-3 lb)
        •    salt and freshly ground pepper
        •    1 tablespoon minced garlic
        •    1 tablespoon sriracha hot sauce
        •    1 medium yellow onion, thinly sliced

        •    12 ounces root beer
        •    mini sandwich buns
        •    For BBQ Sauce
        •    ¼ cup ketchup
        •    2 tablespoons yellow mustard
        •    2 tablespoons root beer
        •    1 tablespoon honey
        •    1 tablespoon worcestershire sauce
        •    For Peach Slaw
        •    2 peaches, sliced
        •    2 cups finely shredded cabbage
        •    2 tablespoons mayo
        •    1 tablespoon apple cider vinegar
        •    1 tablespoon honey


    1. Season pork roast with salt and pepper and rub garlic into meat. Place pork in slow cooker and top with hot sauce and onions.
    2. Pour root beer over pork, reserving 2 tablespoons for BBQ sauce. Cook on low heat for 7-8 hours.
    3. Meanwhile, make BBQ sauce by whisking together ketchup, mustard, root beer, honey, and worcestershire sauce. Set aside.
    4. Just before eating, prepare slaw by tossing together peaches, cabbage, mayo, honey, and apple cider vinegar. Season with salt and pepper to taste.
    5. When pork has finished cooking, remove meat and onions from crockpot. Shred pork and mix in onions and BBQ sauce to coat.
