Grilled Barramundi with Green Nam Jim

        Cook time: 25 minutes
        Yield: Serves 2


    •    sea salt
    •    virgin olive oil
    •    2 x barramundi fillets

For Green Nam Jim:

    •    1 lime
    •    2 tbsps water
    •    2 garlic cloves
    •    3 green chillies
    •    1 carrot, julienne
    •    1 tsp brown sugar
    •    2 tbsps fish sauce
    •    1/2 cup bean shoots
    •    1 red chilli sliced thinly
    •    2 spring onion sliced thinly
    •    1/2 bunch coriander, stem, save leaves for garnish


  1. Heat a BBQ or griddle pan until smoking, brush the barramundi with olive oil. Place skin side down on the grill and cook until the skin is crispy, and the fish is cooked halfway through. Turn over and cook the other side.
  2. In a mortar and pestle combine the green chilli, garlic, coriander stem and salt. Crush into a paste then add the sugar, fish sauce, water and lime juice. Mix together.
  3. Combine the coriander leaves, spring onion, bean shoots, carrot and chilli, and lime then mix together.
  4. Serve the Barramundi topped with the salad then drizzle with the green Nam Jim.
